AT the meeting on September 5 the speaker was Lorraine from Godsell Cheeses.

Godsells are artisan cheese makers based in Leonard Stanley.

All of their cheeses are hand made, using milk from their own farm.

Lorraine explained the differences between artisan cheeses and those sold in supermarkets.

The artisan cheeses are round in shape and not square and are cloth wrapped while maturing.

Only 4 ingredients are used milk, vegetarian rennet, salt and a starter which is the same bacteria as already in the milk.

Lorraine brought along a selection of cheeses to taste.

She said that as with wine tasting you should smell the cheeses before tasting it.

She explained how in flavoured cheeses it is important to get the balance right between the cheese used and the flavouring.

All the cheeses were enjoyed by the members thought the chilli flavoured one did leave people with a burning mouth which was relieved by eating a mild cheese.

It was an enlightening afternoon, greatly enjoyed by the members.
