Well, we are here to help, every morning we are going to bring you a simple, healthy dinner recipe that the whole family can enjoy.

On Tuesdays we will bring you a favourite Slimming World recipe and first up is one of the most popular dishes enjoyed by SW followers: Diet Coke chicken.

Despite the name, the dish doesn't taste anything like diet coke- the final product will be a sweet, tangy dish- perfect to serve with rice.

Ingredients

Diet cola chicken

Serves 4

Ready in 50 minutes

 4 tbsp tomato purée

120g passata with onions and garlic

1 tsp paprika

2 garlic cloves, crushed

2 tsp Worcestershire sauce

1 tbsp dark soy sauce

2 tbsp balsamic vinegar

1 tsp dried mixed herbs

330ml can diet cola

Low-calorie cooking spray

4 skinless and boneless chicken breasts, all visible fat removed, cut into large chunks

3 peppers (mixed colours), deseeded and cut into bite-size chunks

1 large onion, roughly chopped

200g sugar snap peas

Boiled mashed potatoes, to serve

Mix the tomato purée, passata, paprika, garlic, Worcestershire sauce, soy sauce, balsamic vinegar, dried herbs and cola together and set aside.

Spray a wide, deep non-stick frying pan with low-calorie cooking spray and place over a high heat. Add the chicken, peppers and onion and stir-fry for 5 minutes or until lightly browned. Pour over the sauce and bring to the boil. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally.

Add the sugar snaps and cook for another 10 minutes or until the sauce has reduced and thickened a little and the chicken is tender and cooked through.

Season to taste and serve hot with the mashed potatoes.
